Mom's Barbeque Chicken Wings

Mom’s Barbecued Chicken Wings

Barbecue Sauce, mixed together:

1 ½ cups bottled Italian salad dressing 

OR

¾  tablespoon dried oregano

½ tablespoon dried basil

½  cup wine vinegar 

2/3  cup virgin olive oil 

2  tablespoons minced garlic

½ cup ketchup

2 ½  tablespoons soy sauce

2 ½ tablespoons light brown sugar (optional)

4 pounds chicken wings, rinsed and drained* 

1. Mix the bottled or homemade dressing with the garlic, ketchup, soy and brown sugar in a bowl and add the chicken wings. Stir to coat, cover with plastic wrap, and let the wings marinate for several hours or overnight, if possible in the refrigerator.

2. Preheat the oven to 375 degrees. Line 2 cookie sheets with aluminum foil and arrange the wings on the pans in one layer, pouring the marinade on top. Roast the wings for about 50 minutes to an hour, turning once, until they are a deep golden brown. Remove and serve hot, at room temperature, or cold.

*You can substitute chicken breasts or legs for the wings. If using legs, increase the cooking time to 1 hour and 20 minutes, turning several times.
