I. Planning the Menu and Stocking the Pantry

Introduction to the “Healthy Eating Plate”, which was designed by Dr. Walter Willett, Chairman of Nutrition of the Harvard School of Public Health and an inter-active discussion on how to design a simple, delicious, healthy meal with examples and recipes. There will also be a discussion with the participants of the difficulties of every-day meals with strategy suggestions. In addition, there will be a demonstration and tasting of Pan-Seared Salmon with Hot and Sour Broccolini Slaw.

II. Virtual Visit to the   Supermarket

With the help of power-point presentation, Nina will take everyone to the local supermarket and introduce them to the eclectic assortment of healthy whole grains, pre-mixed sauces, and healthy, prepared foods that may be used in week night meals. There will be a  show-and -tell  on reading a food label and a quick demo and tasting of Lemon-Pepper Chicken with Spinach Noodles in Chicken Broth  and tasting.

III. Health-Giving Powers of Fruits and Vegetables

In Dr. Davis Heber’s, (Chairman of the UCLA Center for Nutrition,) best-selling book, “What Color is Your Diet” he introduces the seven different colors of fruits and vegetables that can help strengthen our immune system and improve our health. Nina will introduce their various health-giving properties, the best varieties, along with simple and ingenious tips on how to improve their therapeutic characteristic. She will also give a quick demo of Rainbow Vegetable Salad with Spicy Tahini Dressing and show a video on “How to Stir-fry Broccoli” (or any green vegetable).

IV. How to Use Herbs and Spices to Make Dinner Taste Irresistible

In a show-and-tell, Nina introduces participants to the fresh herbs and spices essential for the pantry of every kitchen. She also talks about their myriad uses as well as their health-giving properties as researched by Dr. James Duke, renowned herb/spice authority and best-selling author of “The Herbal Pantry”. Students will also watch a “Quick Bite” Spice video & sample a sumptuous Curried Vegetables with Tofu and Cinnamon Rice.
